7 proven ways to keep garlic fresh, juicy and flavorful for long
At home, you can save the garlic heads for the winter. Simple methods will help preserve their juiciness, freshness and aroma.
Garlic heads keep well in glass jars. To do this, they must first be well dried, but not peeled from the top layer of husk. Procedure:
- Take a sterilized jar.
- Lay the first row of heads and sprinkle with flour so that it completely covers them.
- Then the second row and a layer of flour.
- Alternate stacking until the container is full.
Flour well protects the vegetable from premature drying and the appearance of mold.
You can replace flour with salt. Pour 2-3 cm of coarse table salt at the bottom of the jar. Then place the heads and sprinkle them with salt again. So you need to fill the entire jar. Salt absorbs excess moisture, which prevents garlic from getting raw and spoiling.
Peeled slices can be stored in glass jars:
- Take a sterilized, dry container and a plastic lid.
- Place the previously peeled garlic cloves all the way to the top.
- Fill them with any vegetable oil (olive, sunflower, corn).
Place a full jar in the refrigerator on the bottom shelf. The shelf life is more than 3 months. So the garlic will retain its juiciness and freshness, fill the oil with aroma, which can then be used for frying.
In cling film
A plastic wrap will help keep the garlic fresh for a long time. Wrap the dried heads in 2-3 layers. Store in the refrigerator in the vegetable compartment.
If there is no refrigerator or space in it, then put the garlic wrapped in foil in a cardboard box. Sprinkle each layer with fine sawdust. Place the container in a cool place, for example, a cellar, balcony, corridor.
An unusual and a little time-consuming way. It allows you to extend the shelf life by several months without losing freshness and juiciness:
- Melt the paraffin wax using a water bath.
- Dip the unpeeled heads of garlic one by one into the hot substance, holding them by the tails.
- Place on plastic wrap and let cool for 2-3 hours.
Put the frozen paraffin heads in prepared cardboard boxes. Keep in a cool place. A thin protective layer will prevent the vegetable from drying out, thus preserving its freshness and aroma.
In fabric bags or nylon tights
Dry the heads, cut off the tops and put them in the prepared bag. Store in a cool place, for example, in a cellar, on a loggia.
- If there is low humidity in the storage room, sprinkle the heads with onion peels.
- If the humidity is high, then first dip a bag of cloth in a strong saline solution, dry in the sun. Then it can be used for storage.
In pigtails or buns
It has been learned to store garlic in braided pigtails or bunches for a long time. This does not require any financial costs. Dry the grown vegetable along with the stem. Braid or tie into a bun. Hang in a cool, dry place from a nail or hook. In this state, the heads are stored for up to 5-6 months.
If you hang garlic braids in the kitchen, they will become an additional detail of your interior.
In boxes and cartons
To store garlic in cardboard boxes, wooden boxes or wicker baskets, you must observe the optimal mode:
- room humidity - no more than 50-80%;
- air temperature - from +3 ° С to −5 ° С.
Trim the roots of dried garlic and lightly burn them over the fire. This can be done with a lighter, candle or gas stove. Then place the heads in a container and place in a dark, cool place.
Storage of garlic heads in vacuum packaging allows you to preserve freshness and aroma for a long time. Oxygen is not supplied, so mold or decay does not occur. Place the heads in a bag. Use a special device to evacuate the air. Store in a refrigerator or drawer in a cool place. Thus, garlic will preserve its taste for a long time.
You can also use jars with special lids for vacuum storage of food. Place whole heads or cloves of garlic in a container in tight rows, close it with a lid and pump out the air.

First of all, you need to prepare the cellar: clean it of debris, disinfect, ventilate. To control the temperature - install a thermometer. Humidity can be determined by the flame of a candle. If the flame is level, the cellar is dry. If the flame deviates, the humidity in the cellar is high. Additional ventilation is required to eliminate excess moisture. So, the cellar is ready, now it's time to start storing vegetables.
How to preserve potatoes
Before lowering the potatoes into the cellar, they should be well dried. As a rule, they devote several hours to this, spreading it out in a dark place. After drying, the potatoes are sorted and discarded.
Store potatoes at t + 2 ° C, + 4 ° C. At elevated temperatures, potatoes sprout and taste is lost. With high humidity, the fruits begin to rot. To remove excess moisture, you need to cover the potatoes with burlap or lay a layer of beets on top of them.
This closeness will help the vegetables. The beets will receive the necessary moisture, and the potatoes will get rid of it. Diseased tubers are immediately removed. If the potatoes began to rot, then not only the spoiled potatoes are removed, but also those that came into contact with it.
On potatoes prepared for food, be sure to regularly remove sprouts. If shoots appear on the planting material, then the shoots are removed only once. Otherwise, the potatoes for planting will be weak, and there will be no good harvest.
For storing tubers, boxes or containers are used, well ventilated with low sides. They put the container on a platform, 15-20cm high. It is not recommended to move boxes close to the basement wall.
How to keep carrots fresh longer
There are many ways to store carrots. Each gardener selects the one that is most acceptable to him. Before laying, the carrots are sorted, cracked are discarded, the tops are cut off.
Storage in bags. Use sugar bags. Carrots are poured, dusting with ash (for disinfection), tying the bag with twine and dipping into the cellar.
In sand carrots remain juicy and fresh for a long time. For better preservation, the sand is mixed with lime or loose chalk. Such an alkaline environment does not give putrefactive microbes a chance to form colonies. The sand layer must be constantly wet.
In boxes. For storage, small boxes are chosen, on the bottom of which mint leaves and mountain ash are poured. You can simply sprinkle carrots with onion peels in a three-liter jar. It is convenient to store small carrots in a jar. Do not close the jar, turn it over and place it on a wooden surface. In coniferous sawdust. Some gardeners use moist (15-20%) coniferous sawdust for storage.
In the ground. Part of the carrots can be left for wintering in the ground. Care should be taken to remove it in the spring after the ground thaws. Otherwise, it will grow.
Beets can be stored well until summer!
Before laying the beets, the tops are cut off, departing from the root crop by 2-3 cm. The root and side roots are also shortened. Carefully peel the beets from the ground so as not to damage the delicate skin of the vegetable. Beets are removed for storage only when all the cuts on the tops are dry. These simple rules will help to increase the shelf life.
Most often, dry rot affects beets. Usually, she appears near the tail. At the slightest hint of rot, the affected area is cut out and sprinkled with wood ash.
How to store vegetables in winter
Hello dear friends!
At the beginning of autumn, the vast majority of gardeners in our country again promise themselves "not to plant so much anymore" and, looking at the centners of ugly zucchini with apples, are looking for a place for a warehouse and come up with ways of proper storage. How to keep vegetables with minimal loss of vitamins and beneficial nutrients?
For laying a crop for a long storage period, types of vegetable and fruit varieties are used only of late and medium-late ripening periods. Early maturing varieties are usually processed, dried or canned for the winter. Only healthy, undamaged, clean and dry fruits of normal maturity are chosen for storage.
It can be kept in an ordinary dark room by tying its heads into braids. After collecting, it is dried in the air for several days, cutting off the feather not to the base. Then they are tied together with "tails", wrapped in polypropylene cloth (sugar bags) and hung in a dark place, away from radiators.
The second option - peel the cloves of garlic and pour in vegetable oil, while getting two products in one, always fresh garlic and healing garlic oil for sauces.

Storage of beets, carrots, turnips and radishes
All root crops must be cleaned from the ground - beets, radishes, carrots, parsnips or turnips. The tops of beets are broken off and the roots are preserved. Root crops are stored in large containers or boxes, placing them in layers between dry sawdust, sand, peat, hay or onion husks.
Chalk is added to peat or sand in a ratio of 1 to 10.
Carrots are better preserved if the roots are dipped in a viscous solution of clay and dried in the air.
In the old days, potatoes were kept in a two-meter-long dug hole, covering the tubers with a 70 cm layer of straw and sod on top. Now, they are dried on a spread fabric and before winter laying, previously stored in absolute shade under a street canopy, at a temperature of 14-18 `C.
Having withstood a month, they are placed in large boxes on stands 20-25 cm from the floor and with holes in the walls.
The second method is to spread several layers of non-woven material, evenly lay out the tubers and cover on top.
Potatoes are stored at a positive temperature of 2-4 `C, periodically removing sprouts, avoiding an excess of moisture or drying out. It is quite difficult to preserve the entire crop for a long time, the potatoes freeze at 0`C, and germinate at 5`C.
A good addition to preservation is to sprinkle the tubers with chopped fresh rowan leaves.
